Fiddleheads for harvest

Luckily I have a good crop of ostrich fern near the spring -- the best type of fern to eat. You can recognize ostrich fern because it sits on a raised hummock and when it's young and ready for harvest, some of the fiddleheads still have a sheath of brown paper on them. Boil the fiddleheads 7 minutes, then finish in butter or olive oil on the stovetop. Serve with carmelized onions as a side dish. They are also excellent as a pizza topping.
